The merit of Dr. Cole was to have developed a type of protein diet that can also be adopted by those who follow a vegan or vegetarian diet. When we think of proteins, we are used to making the association with those of animal origin, which, however, if taken in excess, can contribute to creating inflammation within the body.
If animal proteins are not accompanied by an adequate supply of vegetable fibers, they can promote a state of acidosis which facilitates the emergence of inflammations which, in turn, become fertile ground for diseases, even serious ones.
