There are discoveries that change lives, and the discovery of the ketogenic pizza was one of them (very slightly exaggerating …)! Seriously, this recipe for the excellent Ditch The Carbs was a revelation for me, when I was new to the low-carb / keto world. I was beginning to discover the wide variety of this diet, in particular thanks to the adaptation of recipes such as pizza, spaghetti, muffins or even hamburger (I will have to tell you about it!).
In addition to being delicious, ketogenic pizza (or fat-head pizza) is grain-free, gluten-free, and low in carbohydrates. To reduce the carbohydrates in the dough, mix the grated melted cheese, the low-carb flour (s) (almonds, coconut, flax, lupine…), a spoonful of whole cream and an egg. The cheese is melted in the microwave before mixing everything together to obtain a dough that is easy to spread. Finally, cook the dough on its own before adding the filling.
These recipes come mainly from American websites, the flours used are mainly almond and coconut flours. These flours (especially almond flour) are quite expensive and come from halfway around the world. If you want to eat more locally, you can try lupine or flax flour. We will keep the same proportions.
I offer you a summer pizza recipe, from raw ham, feta cheese and cherry tomatoes, but you can of course garnish it as you wish: with a base of sour cream, tomato sauce or pesto, with salmon, Roquefort, arugula… To your imagination!
PS: The most attentive will have noticed that the dough is the same as that of my ketogenic pissaladière. Well seen ! Do not hesitate to multiply the proportions to make several pasta at once and freeze some for later.
RECIPE
Ingredients
– 1 mozzarella
*- 100g of almond flour (or a mixture of almond, lupine, flax, coconut flour …)
– 1 tbsp full cream
– 1 egg
– 50g of tomato paste
– 4 slices of raw ham
– 100g of feta
– A few cherry tomatoes
– Black olives
– Salt and pepper
Steps
1- Mix the mozzarella with the almond flour. Add the cream.
2- Melt everything in the microwave then add the egg, salt and pepper.
3- Reserve 30 minutes.
4- Spread the dough on a baking sheet, prick with a fork, bake for 12 minutes at 180 ° c.
5- Mix 100g of tomato paste with 100ml of water.
6 Remove the dough from the oven and garnish with the tomato paste, raw ham, feta, cherry tomatoes and olives.
