You know, those who at the first bite bring back so many memories! Cheesecake is one of the star desserts in the ketogenic diet because it is very easy to adapt. You will enjoy a cheese-cake with a dense and creamy texture. For this, I use kiris.
RECIPE
For one part: 5 g of carbohydrates / 80 g of fat / 22 g of protein
Ingredients for 4 portions
For the dough:
2 eggs
100 g of almond powder
100 g coconut shavings
120 g melted butter
3 tbsp erythritol
For garnish :
20 kiri
1 egg
3 tbsp erythritol
A few drops of liquid vanilla
A glass of raspberries (or other red fruits: strawberries, blueberries …)
Half a sheet of gelatin
Steps
Combine the almond powder, coconut, eggs and erythritol, then add the melted butter.
Spread on the bottom of a springform pan and bake for 10 minutes at 180 ° c.
Meanwhile, combine the kiris, egg, erythritol and liquid vanilla.
Put the gelatin sheet in half a glass of water for 5 minutes. Mix the raspberries, put them in a saucepan over a low heat and add the gelatin sheet. Cook for 5 minutes, stirring.
When the dough is out, put the mixture in the mold and bake for 10 minutes at 100 ° C.
Pour the red fruits evenly.
Leave to rest and put in the fridge a few hours before tasting.
